3 mistakes every beginner makes

Look inside the manual
  1. 1Under-whipping the creamSoft cream makes icy, dense ice cream. Whip until the peaks stand straight up when you lift the beaters.
  2. 2Stirring instead of foldingStirring knocks the air out. Fold gently, just until the streaks disappear.
  3. 3Using raw eggsNever put raw eggs in ice cream. Use no-egg recipes, or cook a custard base to at least 160°F.
