04Big mixing bowl with a coverRoom for the dough to double.
05Bench scraperCuts and lifts sticky dough.
06Rimmed sheet panFor your first pizza: a thick, crispy pan pizza.
07Pizza stone or steelHolds heat and crisps the bottom of round pizzas.
08Pizza peelA flat paddle to slide pizza onto the stone and back out.
09Thick oven mittsThe oven, stone and pan get hotter than anything else in the kitchen.
The manual tells you what to look for when you buy each one.
- 1Not preheating the stoneA stone needs 45 minutes to an hour in a hot oven. A cold stone gives a pale, soft bottom.
- 2Rolling with a pinA pin presses out the air that makes the rim puff. Stretch by hand, and leave the edge alone.
- 3Piling on toppingsToo much sauce and cheese makes a soggy middle. Less is more, especially on a round pizza.
